Hoppin' John is a South Carolina Lowcountry meal steeped in tradition and history, said to bestow good luck and prosperity on those who eat it. Traditionally eaten on New Year's Day in the South, but often served year-round. Cooked collard greens are sometimes incorporated to symbolize money for prosperity. The dish is frequently served over Carolina Gold Rice and accompanied with cornbread to symbolize gold. Typically made with bacon, but you can substitute ham hocks, smoked sausage, smoked turkey or keep it vegetarian. Charleston's Own traditional Hoppin' John recipe is included. 12 ounces
